Nothing says “Texas fall” like cornbread hot from the cast-iron skillet, slathered in butter and chased with sweet tea. This one’s our go-to from the Homesick Texan playbook—simple, sassy, and stupidly good. Pro move: Swap in jalapeños for a spicy Thanksgiving kick, or crumble it into your dressing for next-level stuffing swagger. Pairs perfectly with chili on game day… or that bird on the 27th. (Serves 8; bake time: 25 mins)

Ingredients:

  • ¼ cup bacon drippings or vegetable oil (bacon for extra swagger)
  • 2 cups finely ground cornmeal (yellow for that golden glow)
  • ½ cup all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • ¼ tsp baking soda
  • 1 large egg, beaten
  • 1¾ cups buttermilk
  • 1 tbsp sugar (optional, for a hint of sweet Texas twang)

How to Whip It Up:
